Under the offense AI how should I have that set? I have the standard ones that were put in there, but I am wanting to take it a step further this year. What are some good tactics to put in there to make the O better?

Set up each quarter different, and put your unique situation first. It goes top to bottom. If you want to go for it on 4th down and 1 yard, it needs to be above punting the ball on 4th down.

Winning by 18
Losing by 11
4th Quarter 3 minutes remaining - need 3 to tie

would it be sound to air it if chasing the game and running it down the middle if winning? i'm a bit of a newb with american football but willing to learn quickly

Clock management has not really been implemented, but these are still solid strategies in terms of odds.
