I'll first give you my FB's stats. He is mostly a blocking FB that can run the ball a few times too. He is LVL 21

Strength: 46.66 Blocking: 45.43
Speed: 33.11 Tackling: 14
Agility: 31.38 Throwing: 10
Jumping: 12.21 Catching: 21.99
Stamina: 33.81 Carrying: 32.89
Vision: 20.74 Kicking: 9
Confidence: 22 Punting: 11

Thanks to Greasemonkey I also have numbers for my scouting report:
Overall: 30
Rushing: 27
Blocking: 36

My team has 3 FB's but I manage to get around 35-40 plays a game. High stamina ultimately means more playing time. Most FB's dont bother to deck out their stamina and thus only get around 30 plays. Strengh and Blocking should be about on par with each other and so should speed and agility. I have stopped raising attributes such as carrying, vision, confidence etc.. . When I boost at the start of season 4. I plan to raise my catching and jumping as my current teams runs a pass-happy offence. I should benefit from that being able to defeat zone coverage where safeties or tiny LB's are covering my zone. By level 25 or so I should be an adept receiver out of the backfield. Opening major opportunities for me and my team. I call it the Train-to-the-West-Coast back. As I can catch and block very adeptly. As for SA's it all depends on what type of offence your team runs, but here are some SA's that you should always update:
Power Thru: Always make sure this is one of your highest special abilities.
Dive 4 Yards: I noticed from most of my replays in season 2 I had come close to the goalline only to be stopped by two or more defenders. This works well with jumping stat.
Pancake: Make sure you have lots of panecakes in your SA's you'll be glad.
Also play on hard and set run style to power.

If you were to train up jumping and catching to ~25 and spend your points on agility I think you'd be happier imo.

He wants to be a west coast fullback, jumping is part of catching passes.
