I don’t recall ever seeing a LB build for zone coverage. What would one look like?

Hmmm. Well, to start with, I'd probably use the coverage arch since it emphasizes Speed, Agility, Jumping, and Vision... with Vision being the key to the quality at the end. I probably wouldn't do much with my SA tree though since there's only one decent SA there when it comes to the passing game and that's Swat Ball. Since the SA tree is basically crap, you'll need to add on the SA's you need like 'Zone Focus', 'Super Vision', and 'Closing Speed'... at least those 3 for starters. The biggest issue is that LB's didn't get much coverage love at all so they're not completely worthless as pass coverers but they're pretty close. SA tree is so crap for LB's when it comes to the passing game.
If you know the DC you're building for I would seriously consider building a Zone SS instead and play him at LB when you want zone coverage there. Sure... small OOP penalty... but a much better build built exactly for that job. Otherwise I'd scout up a Zone FS or SS and look at their build and try hard to copy that to your LB.

This with at least some ability to get INTs otherwise pretty useless.

Could really build it as any other coverage lb but if zone is the focus Maybe this would be good.

85-90 agility
94 Vison
50 jumping
50 tackling
35 strength
60 stamina
40 confidence
5 swat ball
10 superior vision
5-10 zone focus? Or hell ball hawk is good to.

I personally don’t see the point in coverage builds that can’t catch, so if with this build you get your catching to 70 or even like 68 min, pretty solid.
