In this case I think the WR should be pancaked instead of holding up against three defenders.

Rookie dots. Don't have the vision or anything else to get around their own players, that's the issue, not some WR blocking.

I would also like it if a WR didn't mug my DT in the ass while chasing someone 70 yards down field.

He's blocking one, the other two took a direct route to the ball carrier which lead them into the blocker. It's an issue of vision, which will be an issue in Rookie. It's an issue for all, so plan accordingly.
