If I wait until after Day 48 and create a player on Day 3 of next season, will I get all the training points up to the previous season's Day 41?

Creating a player today will net him 26 TP. That will increase by 2 until Day 0. On rollover from day 0 to day 1 the 30 TP cap will come into effect (meaning you'll lose any TP over 30 (14 if not on a team) that you have accrued)and any dot created after Day 0 will start with the base number of TP.
