if you go to a team's stadium page, you'll see there are cows all around the stadium.

Those are cows.

As you start to build and expand your stadium, the expansion sections go right over where the cows are standing, until when your stadium is fully built-up, you don't see any cows anymore. So, the more cows you have, the smaller your stadium is.

As for how it turned into a joke... it used to be that the stadium graphics looked way more generic. At some point, Bort did an overhaul of the graphical elements of the site (somewhere between Seasons 5 and 10, I think?), and that's when he added the shrubs and trees and cows to the stadium image. People were highly amused at the time that their stadiums suddenly had cows, and it didn't take long for those cows to basically become a GLB meme.

So, there you go. A totally unfunny joke autopsy. I hope you feel good about yourself now.

As the stadium expands, so does your need to feed the people in the stadium: thus, fewer cows.
