Does that mean the CB will stay in man coverage but if the WR's bunch to a side, he will stay on his side?

Cover man w/o move means he will begin his coverage assignment from where you place him on the field in your custom play.

Yes, he will begin the play wherever you have him set regardless of where the receiver is positioned if you use man w/o move.
