Okay so OC are getting a little carried away here with their creativity and tagged AI cannot pick them up. FB playing HB, TE playing FB, CB playing HB, FB playing TE, HB playing TE the defensive AI cant pick these up so result is a generic play being called. The defense needs a way that these crazy combinations can be picked up the defensive tagged AI. How about a drop down box for the HB,FB and TE positions so that a DC can pick up these quirks?

The only one you listed that can't easily be picked up is CB playing HB. But CB playing HB has a HUGE out of position penalty so I fail to see the problem.
Tags are applicable regardless of position. If I tag a FB as "blocking" and he comes in at TE, that will trigger my inputs that look for a "blocking" tagged player at TE.

This. You can use a reverse type AI if it is that much of a problem or simplify your tags. You should always check your opponant's depth chart pregame and tag appropriately. Wildcat and such should not work against a decent scheme.
I often play my FB at TE and vise versa for added depth or in one case we have no scat FB so I have no choice. I only tag TEs if I absolutely have to.
