Obviously the punting stat needs to be high. But what about other attributes?

Off the top of my head, Strength will help you punt it further, while Vision and maybe Confidence will help you with coffin-corner punts. Probably would need some Stamina, since your Punter will be running downfield and burning energy in the process.
Maaaaaaaaaaaaaaybe consider some Agility (sim claims it helps your punting mechanics), or Speed and Tackling if you want your Punter to be able to make tackles, but I wouldn't put much into any of those 3 until I was out of other things to put points into. My priorities would be Punting, Strength, Vision, Confidence, Stamina, then Special Abilities. THEN worry about Agility, Speed and Tackling.
...and now a Punter-guru will come along and absolutely SCHOOL me on this. But this should get you started, at least.

Jumping. I forgot about Jumping. That's right, that's supposed to help your leg-strength for a Punter, isn't it?
That one never seemed right to me, though.

yep
and no to tackling
I have seen punters with 70+ tackling and 90 strength make 1 tackle every 4 seasons - not worth wasting your efforts

Yeah, that's why Tackling was so low on my list. I've seen Punters that get more tackles than that, though, so that's why I gave it a mention. But yeah, shouldn't be anywhere near the top of your build plan, that's for sure.
