Instead of adding new plays to the playbook, add an option in the custom check downs/custom plays that is essentially a pair of check boxes.
Roll Out Strong [ ]
Roll Out Weak [ ]

If either of these boxes are checked the QB does a different drop and rolls out automatically in the direction selected by the Offensive Coordinator. In this way the OC has more control over the plays instead of roll outs only developing from defensive pressure.

but I'm pretty sure that improving this type of dual threat build is on the NGTH list. Cookie cutter builds only.

not sure I get this...why not just have the QBs rollout in whichever direction there is less pressure?

Because a designed roll-out might be nice to be able to call rather than making the sim do it based purely on pressure. There are times the sim doesn't roll-out due to pressure and you may have wanted it to, etc.

There would need to be some sort of tactic for the d-line on what to do in the event of a bootleg probably (abort rush to hold contain or continue after QB etc)

but probably could be added without major screw ups

You could just have it be part of the play set up, just like the custom depth chart drop down, Rollout Right, Rollout Left. There are a few plays where the receivers predominantly go to one side that it would make sense to have the QB roll that way. Going left on Shotgun Quick In for example.
