what causes them....what can you do build wise to avoid them? or is it just the product of an overnmatched line?

I guess lofty passes would avoid deflections by linemen, but increase deflections and interceptions by cornerbacks.
The bread and butter attributes, vision and throwing, so the QB can avoid throws that are likely to be deflected, and avoid throwing it in a way that it is more likely to be deflected, are the way to go.
