Depends how early your capping/what you want your other attributes to be...
I'd say if your capping early, around the 68 cap

You can 60 cap a .5 attribute ASAP and have it end above 80.

I disagree. I think mid 80's at end build will be great, especially with steady grip capped. My power HB's end build will have 87 natural carrying and he's going to be a beast. I took strength to 78 first and then carrying to 78 next.

I agree with Runner. There seems to be a huge problem in today's sim with force fumbles. Gone are the days of old when people could force fumble like crazy. If you have an OC who is smart about negating or mitigating the spam penalty and utilizing a 3-HB set, I think 77 carrying is fine. Still though, if shopping for AEQ, most smart builds should be able to accommodate four AEQ pieces, so if I see a +3 carrying, I'd snag that up. Then you're talking about 80 carrying. Sounds good to me.

If you want to be a real POWER back then you need to have a lot more than 73.
Mine will have 89 natural and 95 with Steady Grip.

well that depends on your plans for speed and agility.
Remember the end difference will be 4 carrying, no matter what (except you might get .3-.4 extra through steady grip).
I say 73 is enough, if it's your second attribute you should end with 85 carrying, and steady grip should take you to somewhere around 91-92 carrying... those aren't numbers that anyone would scoff at right now... but people also wouldn't scoff at 95-96... they definitely wouldn't. Sure the SP value of that difference is huge, but in the sim it is still just a 4 point gap. Attributes aren't weighted by SP value, they are weighted on a straight 1 to 1 scale.
However, if you were to make an out and out power back your bread and butter is breaking tackles, so you should probably raise those abilities that help you break tackles as high as possible, but if you want to fill out as more of a combo back you might look for places to skimp so you can fulfill your goals for speed, agility, or vision... although I would be one to argue that a combo-back needs carrying just as much.
Anyways I'm rambling, and my only point is that 73 carrying is enough
