Can you explain how much of a benefit there would be to agility by including it in quad training as opposed to moving on to another skill?

Don't go with Slippery yet. It will do nothing for your guy since you have no strength and low carrying. I'd go with one of these knowing that it will be reset down the road:

Track Star - since you have high speed
Mr. Reliable - to help w/ fumbling on 1st & 2nd downs
Adren. Junkie - if your guy carries the ball a lot
Big Heart - if your team sucks

~

Eventually you'll want Slippery once you get your strength up. Probably before that though you'll want Quick Feet and Short Yardage Monster once you have investment into Head Fake, Juke and/or Spin.

Finally Steady Grip to round out the VAs at the end.

My logic is agility is his #1 focus now...buy including it in training, you can hit caps much faster.

yeah but how much faster? I'm just curious is all, I can't experiment with the VPB for a couple days as I'm away from my computer on holidays, but I'm just curious because I've never done it before. Will it save enough SP's to be worth it, or will you only gain one or two levels to the attribute with the multi-train?
