Wondering what the consensus is on what to set tactics for SS and FS (mine are level 5)

Whatever your DC says.
If you are on a team that doesn't have a DC, wrap-up, elusive rushing, check next opponent's tendencies for pass/rush favoring, aggressive rushing, just go for the pick.
