I'm thinking of using this with my level 68 PR/KR but it says it only works when the defender is in man to man coverage? Any thoughts on this?

it is for a WR.

Yes, for catching passes so it will work for a RB going out to catch a pass, but not for returning kicks.

KR/PR are not in man coverage, so...
