On my first TE build, for that matter, my first offensive player build. Trying to build into a mid-range pass catching threat - so speed, agility, vision and catching are my four attributes that I care about.

Anyway, I have very high agility already. My question is, do SAs like Head Fake or Juke have value to me (if I can get them through AEQ) for purposes of getting open? I am not that concerned with what I do after the ball - I am, concerned, however, about getting open over the middle - so if Head Fake or Juke would help that, would it be worth investing in an AEQ, or should I be looking for other pieces, and if so, what? (I have a +1 Agility +1 First Step piece that I've built up - if you guys think First Step is useless please let me know as well).

I've seen that First Step on WRs is massive for getting ahead in man coverage, so I wouldn't get rid of that at all. Don't think Head Fake/Juke have any merit for what you're planning on using them for though.

Just looking at the SAs on wide receivers, you might find getting AEQ with the Route Run SA (#1 on the Possession Receiver tree) would be helpful - gives a bonus to speed and agility when running a route, which may help you get away from a covering LB/SS.
