I built this LB from level 1 to be a LOLB but the team I'm on now has me at MLB, and he had a great game today (10 tackles, 5 PDs, 1 Int TD). If I'm going to be playing MLB the whole season how should I be adjusting his build?

Add strength, so you won't have many missed tackles against power backs and also force fumbles vs speed/agility backs on inside runs
Jumping and confidence seem to be a bid low, but it seems to work for you
So I don't know, if you want to raise those attributes

get str, vision, and tackling up to 60

Just keep building him as you'd build any LB... except now maybe consider getting D-Gen.

If you would like the following stat line, 140 tackles, 11 missed taclkes, 40 FFumbles, #1 LB, Def MVP, try this out:
Strength = Agility = Speed = 68-70
Tackling = 70+

Otherwise, get your strength, tackling and vision to 61, then continue to raise streangth to 68 or increase Monster Hit. The goal of MLB is to stop the run. You do not want to be MLB that cannot contain the run or is stuck using Wrap-Up.

I've seen other builds like this that have produced similar results. This is definitely the way to go.

If I want to stay flexible to still play LOLB somewhere down the line (for example, if we sign a very good MLB) maybe I could just get tackling to 60 and use David vs. Goliath VA? This would save me SP to cap jumping and keep building agility. What do you think?

get agility over the third cap, vision, strength, and tackling over the second cap, in that order. That will keep you busy for quite a while. DnG is probably a good choice, start with just 5 or 10 points in it and evaluate it there, don't max it right away.

Getting Tackling and Strength to 61 would allow you not to go the DvG route and use the VA's for something a little more useful like Power Tackling or Jackhammer. Since you are a MLB at the moment, I would place Str/Tck higher on the priority list than agility, since DvG will not help you fend off the FB or other blocker.

Ultimately, I see all OLB at a minimum should look like this:
Str 61
Agi 68
Speed 73
Tck 61
Vis 61

You basic MLB would look similar:
Str 68
Agi 68
Speed 68
Tck 61
Vis 61

What you are trying to do is find a happy medium between the two.
