If I could either have AE with Blitz or Shed Block for a DT which would be the better one to keep? I was thinking Blitz since it should theoretically trigger on every passing play but wasn't sure.

True, but doenst shed block trigger every block shedding situation?
It also helps alot in the run game btw even though it says the effect is greater when passrushing.
