Having trouble stopping WRs with our CBs. We have man to man underneath coverage and we just added over the top safety help but I was curious. What does the coverage distance refer to in the AI? The options are use basic settings, short, medium, and long. Are these the distances the guy covers in man or is this the distance he leaves between him and the WR? Or this this something else? Thanks.

I think coverage distance just effects where players play in zone coverage. short part of their zone, medium, or deep part of their zone.
It also effects where the SS lines up in Cover 0/1/3.
Honestly though, I'm not 100% certain.

My understanding is that the coverage distance in the AI refers to how far off of the line of scrimmage the CB lines up. It is simply for lining up (the cushion givin at the snap). After the snap, as the WR moves upfield towards the CB, you'll see the individual player tactics "Man Coverage Distance" for the CB kick in (Close/Medium/Far).
