Which should come first for a shutdown corner? I've heard a few people who are convinced catching increases pass deflection chances, while confidence remains one of the great mysteries of GLB.

Catching is crap. so Is confidence.just get jumping to like 88 you'll be fine.
Catching is probably better. Doubt confidence does much above 30.

I've head great things about Confidence on CB's too. The rationale behind increasing Confidence was that the CB would be more confident in their ability to intercept the ball, so they'd attempt more INT's. It sounds sketchy to me, but neither one of my CB's has very high Confidence.
There's only been one game that I think confidence would have played a large effect for my CB. He got beat early twice by a WR, then gave up a large cushion to that WR for the rest of the game. That was in Season 6 though. Sim changed and likely accidentally wiped half the CB/WR interactions knowing how this game works.

Unless, of course, you would have gotten 122 INTs with 48 confidence. We'll never know.
In all seriousness, I like Confidence more than most people but it's generally low priority given all the other attributes DBs need.

Catching>>>>>Confidence.
IMO, of course . . . but the larger pass defense radius makes catching very valuable.
