You're going up against 3 WRs, you play Dime defense, and you want to blitz the extra CB. How do you know which CB to blitz so as not to leave a WR open? Is it always CB4 who would be double-teaming one WR? Where would he line up?

Well I would say that the next one steps up.
CB1 -> WR1
CB2 -> WR2
CB3 blitz
CB4 -> WR3
I think that's how it works anyway.
