How do I put two man on either the WR1 or WR2 in a Shotgun 3 WR set?
I was thinking of 3-2-6 Cover 1.

I think you're right... I believe that the 3-2-6 cover 1 puts your 4th CB on the defense's left.

This is what I'm wondering also. I've also seen all three receivers double teamed. I've tried cover 0 out of 3-1-7 and still no go. Any idea?

It probably depends on who is running routes and who is staying in to block.. If the TE stays in to block, then I think the 3-1-7 Cover 0 would double team all the WRs.. But with him running a route, the SS is going to pick him up..
