I rolled 2 pieces that I want at the same time not sure which to get. They are +1 Catching/ +1 diving catch and +1 carrying/ +1 first step. From everything I read I got a feeling may never see the other again so which is more important.

I disagree, I have Diving Catch and think it sucks. I would go first step as it will help you get off the line really quick and open up the separation between the TE and the LB/SS.
