for those with 90+ speed, 70+ agility, what have people been doing with their vet skills?

since my equipment is in speed, i was thinking of going with Quick to grab extra agility and get the two stats better aligned

Equipment doesn't matter for vet points. It goes by your base attribute. So I'd honestly take whichever one you have higher and go with that so you'll get the biggest boost out of it.

i understand that it is based off of base stats, but the questions are - is quick / trackstar the only 2 to consider? if no, what else? if yes, assuming base skills are equal, is it better to push speed towards 100 with vet points or push agility towards 80

I would say get that agility up. Although not many speed or agility DEs are having good seasons this year b/c of the new changes. If I had the cash on my guy I'd try and throw all his EQ in strength.
