It seems like 90% of the LB builds out there jack up their str and tackling really early. Why do they do this?

cuz they don't know any better. makes sense tho doesn't it? whats a LB's most important job - tackling the ball carrier. so in that sense, having the skill to tackle and the strength to make it would make sense to people new to the game.

yep they don't know any better. they think strength correlates to forced fumbles. it doesn't.

As someone who's actually played the position in competitive sports, the speed/agility/vision focus just plain makes sense. It helps to be strong to shuck blockers you "let" block you until you figure out where the play is going, but that can be a technique move without much strength.
Tackling does become important, but unless they're running right at you, you have to close on the ball. Without speed or agility, the opposition will play-call you right out of the game.
