How has things turned out? I am averaging 3 sacks a game at equal competition. With hardly no SA's (2,1,2,2,0). Are SA's really that important?

S.a's are really that important. with shed block and tunnel vision you'd probably be getting more sacks.

I think you can have success with either approach. I have seen 65 speed, 90 agility, low SA ends have success, and 1:1 balanced with moderate SA ends have success.

that's only true in certain cases. if you are an end with 60 strength, 70 speed, and 90 agility, you can do pretty well without anything in SA, although a couple points in TV wouldn't hurt.
