Make your OT extremely agile and fairly fast. He has a lot less ground to cover, so speed doesn't need to match the DE's, but you can't block a 90 speed guy with a 35 speed guy.
A good OL will stop a speed DE. Also something else you might try to do is work on a lot of short and medium passes. Or you can try to run at him. A lot of speed DEs aren't that strong and can be ran over by a power HB.
We've run toward the speed DEs, sometimes with success, sometimes without.
What I've found most helpful is to run away from them, make your short passes to the opposite side of the field, focus on medium passes, and really limit your long passes.

that's the answer, you don't see the LDE getting a lot of sacks unless the TE completely wiffs on the play and the OT doesn't touch him either..or the running back, or if the quartberack doesn't get rid of the ball in time.
but you can set it up to pass block left or pass block right regardless..just look at the scouting bars if you know he's a beast..and if they are low and he has a ton of sacks, then it's because he's got 80 speed and 70 agility..so set your AI accordingly.

This plus use the TE, HB, and FB to pass block. Now that you have control over formations, you can use a strong I with the TE, HB and FB pass blocking against a speed rush LDE and pretty much neutralize him. Use weak I for RDE. Limit your 3 and 5 wide formations, but when you run them, use primarily short and medium routes.
