Technically speaking, FBs aren't supposed to adjust their blocks. HBs adjust to how the blocks are set up. The defense will just sometimes make a good play, it's not magic.
Obviously, it'd be nice to be able to compensate for a good defensive play, but you can't realistically expect a FB to adjust and pick up a backside defender when lead blocking... it's a team sport for a reason, people have to work together and perform their specific roles to be successful.
A FB's specific role as a lead blocker is to create a running lane for the HBs, by moving/tying-up defenders, giving the HB room to get past.
If the HB does his job, it should lead the defenders right into the FB. Football is a game of angles, cut back and make a defender's angle run him right into your blockers.
P.S. Individual tactics can have a huge impact on game play. Just recently I went from +run to balanced, my FB performed like crap... slow to the hole, taking bad angles, 1/3rd the pancakes, etc...
