How can you specify a formation to empty the backfield and play 4 or 5 WRs?

You can't force it, but setting play distance as long on a pass will give you a much higher chance of coming out in a 3 or 5 WR set.
There is no 4 WR set in GLB.

Not that I have seen. The lack of a true spread formation and/or trips is pretty bad, though.
4 WR set is ideal for elusive back draws and delays.
