If it was turn shoulder, shouldn't that count as a missed tackle? Or at least a hurry?

I think the QB was built in the Culpepper mold, guys bounced off him all the time

I think turn shoulder should be a missed tackle. Just my opinion.

It was turn shoulder. Seen a few plays like that, one was responded to by Bort saying it was turn shoulder.

Doesn't count as a hurry (presumably because the QB just avoids the pressure) or a missed tackle (no idea why).

Well this is just me. But a pancake from behind is illegal "Block in the back". Is what it is usually referred to. And I'm pretty sure Bort hasn't had the time to put that into the sim yet.
