I realize probably a little more in catching than I need. I went the route of trying to having higher catching at the expense of strength and tackling.

Well, the plus is that you can basically forget about it for a while and train something else, like STR, TCK, & CON. Get the SPs into AGI as fast as you can get them and maybe it's time to consider some more STA.

stop with the SA's. Train agi. Also good jumping but you don't need any more catching

You can have all the catching in the world, but if you don't have the confidence to go for the pick, it's just a waste.

Does confidence dictate whether you go for a pick? I would think that confidence dictates how you handle a "bad" play which then determines the amount of in-game morale you lose. The lower your in-game morale, the worse your player will play, which means that probably lowers some attributes temporarily, much like being too tired would do.

I would think that your advance tactics of coverage style would be the dominant decider of how often you go for the int.

I kinda wonder this as well

x2 me as well. Itd be nice to get a breakdown as to what confidence really does for CBs in GLB.
