It's Juke + WR Agility vs SV + CB Vision. (Except WR Agility is also modified by RR and/or QC)
A WR without Juke would be missing a huge part of the equation.

The passing game is an (occasional) change of pace to the running game. A good end-build WR doesn't have to be an every-down player. If you want your individual player to perform better on a pure statistical basis on an auto-pilot or CPU team stamina is a pretty important stat. You can't get stats if you aren't on the field.

millions of people play fantasy football and Madden and they have been around longer then GLB

Fantasy football isn't directly comparable--you're not building those players. You get them how they already are, for better or worse.
But the appeal of fantasy football is stunning. That's the level of appeal GLB should have been shooting for.
