When attempting a 2 point conversion...what play runs? Is it random, or does it take a play from the AI?

If either, what play, or AI does it use?

Go to your offensive playbook and click on Goal Line.
Any one of those "My Selected Plays" at random.

You can change that in the Formations tab though. I thought it used the same D all the time?
