I find that it affects pass quality, which is why you see more unforced bad passes on QBs throwing bullet. The 'makes it harder to catch' unlikely affects the catch ball roll, which is receiver dependent, and rather affects the pass quality of the throw.

On the other hand, it is the only way to get the ball in there before the defender arrives, so it will often make the pass easier to catch.

Every guy with 2 drops in that game has 18 Catching bar. No need to try and pass the builds off as builds off as guys who shouldn't be dropping passes.

show me some guys in pee wee that have much higher catching lolbars then you'd have an argument... again, my point in response to the OP's question is YES at low levels definitely passing style does effect "accuracy" when dropped balls from throwing passes too high on bullet are taken into account. I'm not sure how you can argue that isn't the case

While you are correct in the statement that WRs will drop more passes when the slider is favored highly towards bullet, it does not affect the accuracy of the QB's actual pass. So you are not answering the right question. Accuracy is how close something is to a target. You are correct in the sense that if you factored in drops, accuracy is low, but I think the OP is asking if it affects where the QB's throw will end up.
