While we are on the subject....what's the consensus on how many STOP's are needed. I am hearing 5 STOPS is sufficient as you can have your blocking wedge and 2 gunners.

Depending on how many custom O spots you need. I build 7, but sacrifice things like the third HB, sixth WR, etc.
Considering the energy benefit of adding those extra STOPs (by not having your regular players on special teams as often), you can have fewer WRs, CBs, LBers, Etc.
I like to have two FF builds, two Speed, Strength, Agility builds (jack of all trade SS, CB, FS or a pass rushing DE), and three blocking focused O-line or FB builds (Strength, Blocking, Speed, Agility: They start on the Front wedge until they get enough speed to move to the back wedge).
Even with four TEs and a rushing QB I still had room for a K, P, Returner, 2 FFs, 3 Blockers, 2 Combos.

I've often wondered why people don't just go with 2 STOPS (center and returner) and use COMBO players for the rest of the ST's? They make decent backups to the primary starters of their requisite positions and I've had very good results using them for ST's. When my team owners ask what to get when looking for "stops" for ST's, I usually tell them I only need the center and returner and to fill in with COMBOS all other spots. Reason I ask is I've built several STOP TE's, Centers, Returners, and FB's... but no other STOP types. Everything I read about "STOP" archetypes says they don't do very well as position players. Is this wrong, or just mildly over-stated? Appreciate the help in advance guys. Thanks.

Well, I think when people speak about STOPs they aren't referring to archetype but to the role they will perform. For example, my combo SS is a STOP.

I've had good results (highest I've done it is at national minor level however) with a dedicated 11 man team of ST guys so the regular O and D guys NEVER play ST. K,P, KR (who is often in on tackles in coverage as well), 3 guys as blockers, 2-3 guys who as gunners (in additional to the KR) and the rest (3-4) who are true STOPs (equally good at blocking and tackling). The position and archetype of the blockers and gunners don't have to be STOP at all. I had good luck with 3 fast DTs back when ST guys could actually force fumbles. Speed is always the primary attribute for all of them (except K and P).
the good part is the regular o and d guys never have to play ST (and get tired out) and that the ST guys can go deep into ST VAs. the drawback is having a K and P out there on returns (basically wasting space)--I try to have boomers so they're strong enough to at least make some blocks and then line them up in the front somewhere.

If I had a team 100% my way, I'd use 2 combo SS gunners, 2 C wedge blockers, ask the blocking FB to get special teamer VA as well, plus K, P and a HB returner.
