I think it would be handy if over the season we keep track of how many plays our players get total. as well as a statistical breakdown of what their likely to do most plays, Like if my DE gets 4 plays all season but has 2 sacks, his sack-to-play ratio would be 0.5.

Your total plays are listed both for every game for your game log and in your "full season stats" page for your player.

As far as the statistical breakdown I would say that is rather easy to come up with yourself.
