Why was my punt average for the first game total punt yards minus the two touchbacks (20 yards each)? If that's the case why didn't they subtract return yardage also??

Because you put it in the end zone. Getting a touchback is the same as punting it out of bounds at the 20. You have no control over stopping returns, so that yardage doesn't count against you, it's where YOU put the ball.
