To get a faster jump on the snap. Your speed & first step aren't doing a whole lot of good if you're not reacting more quickly than the blocker.

I just havent seen any "noticable" difference between 55-60 vis and 70+ vis......

I wish I could remember who did testing on this back in the day but I never can. In any case, they posted a lot of data about how often their DE got a jump on the snap at varying points of vision and investment in Jump the Snap. It makes a difference, but I don't often go high vision on my DL just because I'm not building them to get around OL so much as knock them over.
