Know his build's not the best...but was my first DT...

Not bad. Suggest training jumping, and add speed.

Bc of where he is at, and how much tackling he already has/relatively low agility, I would make him a stop. Go for all ff % gear, and a monster hit, add head hunter. Train blocking rest of career. Take speed to 77 natural, tackling up to 77 natural. Then get monster hit/head hunter/big hit to 7-9 natural each. Rock two pieces of ff % and he would be a nasty stop. Arguably a top 10 player in glb, if you want him to be a DT he likely will just be very average, so I would definitely convert him.

pretty good NT, get tackling to 75-80, keep pumping STR.

This is actually excellent advice.

You are miles away from being a good DT, but you could be a very sought-after STOPer and the top GLB teams would beat down your door to have you (take tackling to 78 first, then work speed).
