if I tag all the O players accordingly and do nothing else does the tagging do any good?

Tagging does nothing by itself. Tagging only functions when you set up the AI for those tags. So if you have a QB tagged as rusher, you then need to go to your AI, set up a new input with QB=Rusher, and then it'll call those plays when that QB is in (and the formation, down, and distance are all correct).
