Currently one of my fs has rolled two closing speed pieces, so it is up to 7 with just AEQ, is this overkill or is the two pieces worth keeping rather than roll to try to find a sv or other piece?

Fully upgraded your closing speed will be 10, with custom that's 11, if you invest to 4 it'd be 15 and if you invest to 9, it'll be 20.
Closing speed provides a flat boost to your final "movement score" when pursuing a ball carrier in certain fashions.
You won't see it activating on every play, and the probability is dependent on your team's defensive tactics.
If used correctly I'm sure 10 is very good, and 20 can likely provide a substantial bonus though I wouldn't personally seek to rely on something like that.
If you don't intend in investing SP into the hard hitter tree (probably wise for a FS with their tendency to cover faster, better catchers), then the two pieces bringing you to 10 by themselves is not a bad idea I'd wager.

Not an SA i care for much, in the wrong defense it can count for nothing. If used right then it definitely has some value as AEQ.

Don't do it, the % increase in any SA over 15 is so insignificant that you're better off investing elsewhere.
The only reason to invest in a/multiple Closing Speed piece is on a coverage FS when you're investing everything into the coverage tree and don't want to spend a SP in the hard hitter tree just to boost your closing speed.
