I'm currently in the process of taking Agility to 68, whilst training Strength/Carrying.

I'm not sure the route I want to go next (either take jumping to 61, then start on strength and take it to 68. Or go straight to strength and come back to jumping).

Thoughts?

Edit: He doesn't have his 40's yet, so his missing a bit.

As a possession WR you need to have enough quality to trick the engine into still letting you get targeted, so high agility to go with your catching/jumping/strength, your plan looks pretty sound for now, though strength would get you breaking tackles sooner.

Your options would be;

+jumping raise your catch %age about 5%
+strength add break tackles to your game but no catch %age benefit (slightly lowers knock loose)
+carrying improve the use of your speed after you catch the ball

All three are viable options as you want to end up with all at 60 odd.
