It seems like a ton of passes thrown to my WR are deflected. Is there something my WR can do to help prevent this? Would a very high Jumping attribute help?

Generally jumping will help, but also just catching, and sure hands help as well. Deflection lowers your chance to catch it, but doesn't eliminate it.

But the best way to prevent it is more separation. Speed, Agility, first step are always a WR's best friend.

Your QB needs to throw on a higher "bullet" setting and/or get more arm strength.
