i'm just beginning this whole defensive AI thing and i'm currently just an assistant and i am not touching anything and just looking around and learning about everything.

my question is if there's any way for me to create my of defensive AI and custom plays and just save them to my computer and not mess up what my team has going on...this way i could test them out when we have scrimmages?

don't think so, just save the AI on your team then load the default AI and fool around with that, and save yours and load the other guys AI back when you're done, though you better tell them what you're doing and ask them if it's ok. Might be a way to do it on your comp with spreadsheets or something but I dunno, never tried or had to.
