My original thought was to be balanced leaning towards goal line / short yardage back but recently I have been used much more in a blocking role. I know my speed is very low right now but seeing as it isn't a leveling skill i decided it wasn;t worth capping early.

My question is, should I sink my SP into Blocking to get it capped or put them into something else?

If you want a blocking FB Iwould suggest 68 in strength, blcoking, and agility. Train speed/stamina while doing the first step. Then take speed to 61 while training vision/confidence. Thats kind of how I am building my FB. I went speed a little early but I was able to get strength and blocking to 61 and agility to 68 before I spent any SP on speed at level 23.

Make sure to train speed to 34+ before putting SP into it. That way you can cap it with 3 boosts.

I would worry to much about the blocking my FB does it fairly well without adding too it so far,keep building your rusher
