At level 1 and on, would focusing more on Strength or Speed benefit me more? I was under the impression that Strength would be better to start out with, but with a low speed I would be pretty much crawling to the ball. I guess I'm a little confused.

Depends on the system imo. 3-4 DEs should build like DTs with strength and agility instead of speed and agility.

Doesn't matter, all three majors are supposed to be third-capped anyway.
It's just the route in which you take that will determine how well your player does in those first four or five seasons.
