In the interests of science I decided to go all out to find if it was possible to build a receiving TE that wasn't a speed/agility monster.
Logic essentially went that instead of getting into an arms race with LBs in spd/agi to pump catching/vision/jumping etc. On the idea that it might be possible to get to the point where even running next to them he'd be so far ahead of them in those stats they couldn't cover him.
As I understand it QBs look first for open receivers, then to biggest mismatches, so if a receiver is open they get it but if no-one's open he's likely to be a dump off option and be consistently good for 5-10 yard gains when needed. A side result of this would be he'd get low stats vs gut jobs since WRs would be open a lot and he wouldn't be.

Equipment, some in stamina, +2 in catching and Catch ball chance +6% and +6 in catching and +1 receiving tree from CE.
Season stats on a fairly dominant team in BBB (averages 44 rushes and 30 pass attempts a game) were
Season Games Rec Yds Y/G Y/R YAC YAC/C TD Drops
8 15 33 307.5 20.5 9.3 73 2.2 1 2
In team context he's 3rd in receptions behind the starting WRs (about 10 behind, both of them having double digit drops) and 4th in yards (by 90, 390, 550).
Have to say I'm stuck between capping jumping next, or just training spd/agi then first capping them and leaving them there to level up and come back to main three attributes.
Will keep you updated, try and find out if this is a viable build.
