How important do you think speed or agility are when it comes to pure pocket passers? Provided you have great line protection and rarely get hurried or sacked, would one even bother with either of these attributes? Do they come into play at all in anything other than rushing/scrambling?

Agility is an underrated attribute for pocket passers in my opinion. Your passes are less accurate when you're moving even just slightly and I think higher agility can lessen the accuracy penalty when you're passing while moving. You'll also drop back faster.
