I'm sure you could do with 50-55 speed instead of 61

presuming that you haven't completely ignored vision, stamina and tackling (and i doubt that you have, based on the rest of what you're doing...) then yes, that should get good results.

but then, season 7 was sort of a lost year for D-Linemen in GLB...

Seems almost like it should be more like this at this point

Speed ->68
Agiity->68
Strength->61
Vision/Confidence/Stamina/Tackling->49
FS/CD/SB/TV->9
EQ->Speed

Make your guy hyper fast to start out with, them give him Agility to put the Speed to good use, then when opposing OTs are catching up to your Agility/Speed, get your strength up so that when they finally get their hands on you, you don't get pancaked every play. Vision to negate the snap delay, stamina to have a motor, tackling for obvious reasons. Finish the whole thing off with SAs - first step to beat OTs off the initial snap, CD to get around them, SB to shed the block if they can engage you, TV to finish the job. Speed EQ simply because 60+ strength and 70+ agility is enough to make SB extremely effective.

i thought agility came into play more than strength when trying to avoid being pancaked

You are correct. However, it's been suggested that one of Bort's nerf is to make str a bigger variable in calculations then before.
