How big of a gap is too big. Should I go 86 speed and 60 agility and eventually 90/60 or should I start putting equipment into agility and make it 83 speed and 63 agility and eventually 83/67?

Depends on how you're used. If you usually go out for short drag passes, then keep agility relatively close. If you usually go deep, then having more speed will be a good thing.

The main thing I'm concerned with is when is the gap to big to where it no longer helps me, as in speed and agility are dependent on each other, I don't want to have too much speed and not enough agility to get the full use out of it.
